“Il Rosmarino” restaurant
The time you spend at La Meridiana’s restaurant "IL ROSMARINO" will be just as delightful.
Open only for dinner, this charming room has subtle lighting that illuminates the olive tree on the patio. The candlelight on the starch white linen tablecloths makes the atmosphere magical and enhances all the details: ancient silverware, 19th century paintings and delightful floral compositions.
The flavours of Liguria come together with a hint of wild thyme and rosemary, marjoram and basil. These herbs, along with extra virgin olive oil and olives from Taggia, are the ingredients that are used creatively at "Il Rosmarino".
Simply close your eyes when you're at Il Rosmarino and use your sense of smell to discover the traditional and deliciously light cuisine: all the food is flavoursome, fresh, inviting and healthy.
The simple homemade pasta, fresh baked bread, bread sticks and focaccia are complemented with the elaborate preparation by the chef, who reworks with simplicity the rich dishes of ancient popes and doges of Genoa, such as refined sea bass and artistically prepared vegetables, fish and shellfish.
All of the dishes, which are tasty and delicate at the same time, find their perfect match in Il Rosmarino's wine cellar, where the best regional and Italian wines can be found.
Edmondo Segre's passion truly shines in the most hidden place in this fascinating Relais et Chateaux hotel: the Wine Cellar!
An endless wine list that is constantly updated allows you to choose from both well-established and up and coming producers.
Those who enjoy vertical wine tasting can find all the Solaia, Sassicaia and Tognanello vintages from 1978 onwards, and discuss the evolution of wine over the years.
Aromas and flavours.... a vortex of sensations that do not end with dinner, but continue with a rare selection of spirits: Franco Birocchi, La Meridiana's bartender for over 20 years, will introduce you to prestigious armagnacs, whiskeys and cognacs. Cocktails and after dinner drinks are his passion.
