he kitchen is at one with the environment and it is the owner, Edmondo Segre, who coordinates everything, choosing the best products daily from what is available at the market.
The dishes are inspired by Italian tradition but re-elaborated with constant care in a way that enhances the flavours and aromas of Liguria.
A splendid wine cellar, which is restocked constantly, allows you to choose the best Italian wines, from rare verticals by the most famous names to those from up and coming producers.

Trofie with pesto

Ingredients: (for 6 people)
500g Fresh trofie  – 200g green beans - 100g carrots - 80g pesto - basil – extra-virgin olive oil - salt

Clean the green beans and break into pieces. Clean the carrots and grate into thin strips. Boil water. Add salt once the water is boiling and add the two prepared vegetables. Wait until the water begins to boil again and add the trofie to the vegetables. Cook for 6 minutes, then strain the pasta and vegetables together. Add the pesto, diluting it with a couple of spoons of cooking water. Top it off with a few torn leaves of fresh basil and two spoons of extra-virgin olive oil. Serve very hot.
